Saute | हल्के से तलना। | To cook food quickly in a small amount of oil in a skillet or frying pan over direct heat. |
Scald | पानी उबालने के तापमान से पहले पकाना, जैसे दूध उबलने से पहले उतार लिया जाता है। गरम पानी में मोटे छिलके वाली सब्जी इत्यादी को डाल कर छिलका मुलायम करना। | Cooking a liquid such as milk to just below the point of boiling; also to loosen the skin of fruits or vegetables by dipping them in boiling water. |
Sear | गरम तेज आंच पर सुखाना। | Sealing in a meat's juices by cooking it quickly under very high heat. |
Season and Seasoning | खाना स्वादिष्ट बनानेवाले मसालों से मिलाना। | To enhance the flavor of foods by adding ingredients such as salt, pepper, oregano, basil, cinnamon and a variety of other herbs, spices, condiments and vinegars.Also, to treat a pot or pan (usually cast iron) with a coating of cooking oil and then baking it in a 350° oven for approximately 1 hour. This process seals any tiny rough spots on the pan's surface that may cause food to stick. |
Set | ठीक तरह से जमाना। | Let food reach the desired state of firmness, solid or semi-solid. |
Shred | कतरना - लम्बे टुकड़ो में कतरना। | To cut or tear into long narrow strips, either by hand or by using a grater or food processor. |
Sift | छलनी से छानना। | To remove large lumps from a dry ingredient such as flour or confectioners' sugar by passing them through a fine mesh. This process also incorporates air into the ingredients, making them lighter. |
Simmer | धीमी आंच पर पकाना। | Cooking food in a liquid at a low enough temperature so that small bubbles begin to break the surface. A very low boil. |
Skim | मलाई उतारना। | To remove the top fat layer from stocks, soups, sauces or other liquids such as cream from milk. |
Spider | लोहे का स्टैंड जिस पर गरम बर्तन रखा जाता है (गैस बर्नर) | Iron legged stand that holds cooking kettles and pots over hot embers |
Steam | गरम पानी के ऊपर या पानी में बर्तन रख कर पानी की भाप से पकाना। | To cook over boiling water in a covered pan, this method keeps foods' shape, texture and nutritional value intact better than methods such as boiling. |

Stewing | मीट/फिश आदि को भून कर धीमी आंच पर बंद बरतन/कुक्कर में पकाना | Browning small pieces of meat, poultry or fish, then simmering them with vegetables or other ingredients in enough liquid to cover them, usually in a closed pot on the stove, in the oven or with a slow cooker. |
Thin | मिक्सचर के गाढ़ेपन को पतला करने के लिये लिक्विड/पानी मिलाना। | To reduce a mixture's thickness with the addition of more liquid. |
Toss | बहुत सारी सामग्री को एकसाथ धीरे से मिलाना। | To thoroughly combine several ingredients by mixing lightly. |

Vinaigrette | सिरका, तेल मसाले से बना। | A general term referring to any sauce made with vinegar, oil and seasonings. |
Water bath | गरम पानी के अंदर बर्तन को रख कर पकाने की विधि | A gentle cooking technique in which a container is set into a pan of simmering water. (See also "Coddle".) |
Whip | फेंटना। किसी मिश्रण को एक जैसा बनाने के लिये किसी चीज (चम्मच, कांटा, फैटानी, हाथ की मिक्सी ) से तेजी से फैटना या हिलाना। | To incorporate air into ingredients such as cream or egg whites by beating them until light and fluffy; also refers to the utensil used for this action. |
Whisk | फेंटना। | To mix or fluff a substance by beating; also refers to the utensil used for this action. |
Zest | संतरे या नींबू के छिलके। | The thin brightly colored outer part of the rind of citrus fruits. They contain volatile oils used as a flavoring. |
